Ingredients.....
1 & 1/2 teaspoons of granulated gelatin
1/4 cup of cold water
1 & 1/2 cups of skim milk
2 medium egg yolks, beaten
1 & 1/2 teaspoons of dry mustard
1 teaspoon of salt
1/4 teaspoon of paprika
1/4 cup of white vinegar
sugar substitute equivalent ot 3 teaspoons of sugar
Soak the gelatin in the cold water; set aside.
Scald the milk in the top of a double boiler then slowly pour over the beaten egg yolks, stirring constantly to prevent curdling.
Return the egg-milk mixture to the top of the double boiler and add the mustard, salt, and paprika.
Cook over simmering water, stirring constantly until the mixture is thick enough to coat the spoon.
Remove from the heat. Add vinegar, sweetener, and the gelatin; blend this well.
Pour it into a pint jar, cover and chill.
Stir before using.
Makes 16 servings (yield: 2 cups)
One serving = 2 tablespoons
One serving = up to 2 tablespoons may be considered 'free'
